Une fois terminée l’extraction de jus et d’huile essentielle, les processus de travail qui se poursuivent peuvent différer selon la dimension de l’entreprise productrice, sa position géographique et la spécificité de son marché. La dépulpation des jus est effectuée pour tous les produits destinés au marché des boissons gazeuses. Les consommateurs d’orangeades, limonades ou produits à base de pamplemousse n’aiment pas voir au fond de leur bouteille des résidus de pulpe. Ainsi, même les producteurs de boissons insèrent parmi les conditions d’achat des quantités limitées de pulpe et de sédimentation. Dans les produits destinés à la préparation de boissons gazeuses même l’aspect organoleptique est important, surtout la couleur, son intensité et sa turbidité. A l’inverse des jus, pour les boissons gazeuses le goût et la fraîcheur sont relativement moins importants, vu la dilution du jus dans la boisson et la présence d’autres arômes.

La stabilisation des dérivés pour le secteur des boissons gazeuses, couleur et turbidité, sont plutôt obtenus par des moyen technologiques, en incluant parfois des produits de seconde extraction. La présence d’une quantité de pectine plus élevée que celle du jus pur est très importante pour la stabilité de la boisson. Il faut aussi que cette pectine soit dotée de certaines caractéristiques.
